Finally! Here’s some of the latest Cupcakes that were such a hit the last few weeks at the Farmer’s Market!
Lavender Blackberry Cupcakes: These are inspired by late-summer local produce from fellow vendors at the Farmer’s Market! That distinct floral quality of the lavender pairs beautifully with creamy, mellow Madagascar-Bourbon Vanilla to make these delicate cupcakes. Baked cupcakes are filled with Blackberry Jam to round out the flavor profile with some tart freshness. Topped with a Tahitian Vanilla Buttercream to further accentuate the floral notes. (Four-Pack: $17; Dozen: $40) Also available in Gluten-Friendly (Four-Pack: $18; Dozen: $45).
Carmel Apple Cupcakes: The taste of fall in the Midwest! I add plenty of grated tart Granny Smith apples to this Cinnamon-spiced cake batter. Then I fill the baked cupcakes with a spoonful of my scratch-made vegan Carmel sauce. (Four-Pack: $17; Dozen: $40) Also available in Gluten-Friendly (Four-Pack: $18; Dozen: $45).
Mexican Cocoa Cupcakes: A variation of my ultra-moist Chocolate cupcakes, I replace my usual Madagascar Bourbon Vanilla with slightly spicy-sweet Mexican Vanilla. Add to that a very generous measure of Cinnamon, plus a small dash of Cayenne Pepper, and you’ve got something really special for the adventurous chocolate lover! Finished with a sprinkling of organic cocoa powder and some vegan marshmallows. Chai Vanilla / Chai Almond Cupcakes: These sweet little concoctions get a lovely earthy Black Tea infusion, warmed up with a double-hit of my house-blend of spices (in both batter and buttercream). Choice of Madagascar-Bourbon Vanilla or Almond Buttercream topping. Persian Love Cake (not available Gluten-Friendly): I’ve seen recipe variations of this cake coming from Sri Lanka to Palestine. The basis is a Lemon-Almond Cake infused with just a wink of Rosewater and a kiss of Cardamom. There’s a lot going on in these delicate little cakes, but when the balance is just right you get a very special and romantic flavor profile. Topped with Vanilla Buttercream and a sprinkle of toasted pistachio and edible rose petals.
Red Velvet Cake: The light delicate structure of vanilla cake, with a subtle delicious cocoa flavor. Classic red velvet cake is served with cream cheese frosting; I make a vegan “Cream Cheese” Buttercream filling that is sweet with just a little tang.
Hummingbird Cake: One of my favorite cakes ever! Hummingbird cake has a similar moist texture and warm spice profile as carrot cake. But instead of carrot we use banana and pineapple, and we use a slightly different spice blend to get a more Caribbean flavor. Plus we fold in a generous amount of toasted chopped pecans, then layer with Tahitian Vanilla "Cream Cheese" filling and finish with pecans and dried mango slices.
Carrot Cake: I’ve been working a while on this recipe, trying variations with all kinds of add-ins. But I’ve finally landed on something more simple and classic: carrot cake loaded with plenty of freshly-grated carrot, lovely cinnamon and spices, a good amount of toasted walnuts, and just a hint of bright orange zest. Served with a slightly tangy Vanilla “Cream Cheese” Buttercream.
Coconut Cake: Starting with my Vanilla cake as a base, I swap a few ingredients and add in coconut three ways: milk, flaked, and extract. The results are a super-moist, coconuty dream! Awesome with choice of Buttercream: Coconut, Madagascar-Vanilla, or Chocolate!

Orange Rolls
I am a sucker for the combination of orange and warm spices! I use the same filling here as my Cinnamon Rolls, but infuse the dough with wonderful fresh orange juice and zest, the top the rolls with a drizzle of orange glaze. Yum! Half-Dozen: $23.50
Crumb Cake (in seasonal varieties)
Vegans! You don’t have to miss out on cake for breakfast! A muffin-like cake base, topped with a thick sandy crumble. Available in 9x9 inch: $33.50
